The answer people do not expect

Air feels like nothing, so the quantity of water in it feels like it should be nothing. It is not. A single ordinary room holds something in the region of half a litre of water as vapour — a mugful — and a warm humid room holds closer to a full bottle.

Scale that up and it stops being a curiosity. The air in a 33 m³ shipping container on a humid summer day carries around 700 millilitres. Everything in that container is sitting inside that water, and if the container cools overnight below its dew point, some of it stops being vapour and lands on the contents. That is the entire mechanism behind a storage unit nobody checked.

Why the temperature matters more than the percentage

Capacity roughly doubles for every 10°C of warming. That single fact drives most of what is confusing about humidity:

Saturated freezing air holds less than a fifth of a litre in that room. Saturated air at 40°C holds more than two litres — over ten times as much, at the same 100%. This is why a percentage on its own says so little, and why the app shows both.

The headroom figure

The second readout is the one worth understanding. It is the difference between what the air holds and what it could hold, and it is the number that decides whether anything wet will dry.

Warm air with no headroom left will not dry a towel, and cold air with plenty of headroom will, slowly. Anyone who has hung washing out on a mild damp day and brought it in heavier than it went out has run into the first case. The temperature was fine; the air had nowhere to put the water.

It is also why evaporative cooling stops working in humid conditions, why a still muggy night feels worse than a breezy warm one, and why finishes that need to cure have a working window measured in dew point rather than in temperature.

A note on what this is not

This is a calculation about air, for a volume you specify. It says nothing about where that water came from or where it is going, and it is not a measurement of any particular room — nothing here knows anything about your building. The app it comes from reads outdoor conditions, for the same reason: no phone has a humidity sensor.
